I think you should have a hall of fame of sorts and then take EVERYTHING OFF THE MENU. Bring back the hall of fame dishes (like my favorite 8hour pot roast) from time to time. As much as I hate the thought of not being able to instantly satisfy my 8 hour pork cravings, I would love to try a whole NEW menu of Michael's creations. Knowing that the pot roast isn't gone forever and will make a (semi)annual? return will do two things: Open up one extra spot on the menu for Chef to amaze me and also I'll appreciate it that much more when it DOES return on a (semi)quarterly basis. ;-) You never know: If Chef takes a break from making it, he may approach it from a whole different angle (that happens to me when I don't make something for a while) - OK this was long. so sorry. just my $0.02 Happy New Year Michael, Nancy & staff!
